David Sumidas Hawaiian Beef Shank Stew Recipe

Hawaiian style beef stew made with beef shanks instead of stew meat and served on a bed of fresh Sumida Farm watercress..


Ingredients:
  •     3-4 servings
  •     2-3 large beef shanks
  •     1 medium local sweet onion, cut in wedges
  •     1 tablespoon oil
  •     2 cloves garlic, minced
  •     2 (14-1/2 oz.) cans beef broth
  •     2 tablespoons worcestershire sauce
  •     1/2 cup wine
  •     2 bay leaves
  •     1 teaspoon dried thyme
  •     2 carrots, peeled and cut into chunks
  •     2 stalks celery, cut into chunks
  •     2 potatoes, peeled and cut into chunks
  •     Salt and pepper to taste

Cooking Process:

In a large pot, heat oil over medium-high heat and fry beef shanks until lightly browned, turning over, about 5 min. Add onion and fry about 3 min. Add garlic and fry about 1/2 min. Add remaining ingredients and simmer 1 1/2-2 hours until beef is tender and falling off the bone.
